Apple and Mint Duck Breasts

Serves 12

Ingredients
8 duck breasts
6 apples (MacIntosh, Golden Delicious, Red Delicious), skin on, cored and quartered
6 ozs white wine
6 oz. duck stock
6 oz. heavy cream
1 mint sprig
1 Tbsp. chopped parsley
salt and pepper to taste

Directions

Place heavy frying pan on low heat. Heat completely without oil. Place duck breasts, skin side down, in pan and fry for about 5 minutes. Turn over and fry on meat side for 3-5 minutes. Breasts should be slightly brown. Place on rack in a rosting tin. Roast at 375 degrees for 40 minutes.

Leave 3 Tbsp. duck fat in the frying pan. Add cored apples and cook until brown. Remove apples. Add wine, mint and duck stock to pan. Bring mixture to a boil until it's reduced by half.

Remove duck breasts from oven. Allow to cool enough to handle. Slice breasts thickly. Arrange with apple slices and cover with sauce. Garnish with chopped parsley if desired.

Tub O' Sweet Potato Pie

Serves 12

Ingredients
For the topping:
1/4 cup + 2 Tbsp. flour
1 1/2 Tbsp. dark brown sugar, packed
1 1/2Tbsp. soft margarine
1/4 cup + 2 Tbsp. chopped pecans
For the pie:
4 1/2 cups mashed sweet potatoes
3 egg whites, lightly beaten
2 egg, lightly beaten
3/4 cup evaporated milk
2/3 cup dark brown sugar, packed
3 Tbsp. soft margarine
1 Tbsp. vanilla
1 1/2 tsp. grated orange peel
1/2 tsp. salt

Directions

Topping: Drop margarine in small bits into flour and brown sugar mix. Rub together with fingers until crumbly. Add pecans, mix, set aside.

Pie: Preheat oven to 350 degrees. Grease 2 or 3-quart casserole dish or 10" square baking dish.

In separate bowl, mix egg whites, egg, milk, brown sugar, maragarine, vanilla, orange peel, and salt until combined. Add sweet potatoes and blend.

Place potato mixture in casserole. Sprinkle brown sugar-flour topping on top. Bake 30-35 minutes or until golden brown.

Lucky Ducky Punch

Serves 12

Ingredients
48 oz. unsweetened white grape juice, chilled
6 oz. tangerine frozen juice concentrate, thawed
1 cup club soda, chilled
1/4 cup fresh lemon juice, strained
1/4 cup brandy
25 oz. sparkling wine (usually one bottle)

Directions

Whisk together the juice, the concentrate, the club soda, the lemon juice, and the brandy in the punch bowl. Chill in the refiregerator until thoroughly cold. Add the sparkling wine slowly, immediately before serving. Fill punch bowl with floating rubber duckies. Garnish glasses with thinly sliced tangerine slices.
