"Fake" Cake Ice Cream Cones

Serves 24

Ingredients
Enough batter for 2Ê8- or 9-inch round yellow cakes
24Ê"cake" ice cream cones (flat on the bottom)
1ÊcupÊsemi-sweet chocolate chips
1ÊounceÊcandy sprinkles or other candy deocration

Directions

Whether you make the cake from scratch or out of a box, make sure there is about 19 oz. of cake batter to be able to fill each cone. Fill each ice cream cone about 75% full of cake batter (batter should come up to the first ridge). Set filled cones either in the cups of a muffin tin or on cookie sheets.

Bake at 400 degrees for 15-20 minutes or until toothpick insterted in the middle of one of the cakes comes out clean.

Sprinkle each cake top with chocolate chips while it's still warm. The chips will melt and look like icing. Spread over top of cake evenly with a knife. Decorate with sprinkles or candies.

Ants On a Log

This is a kids' treat that no self-respecing adult will admit to loving with all their heart.
Serves 12

Ingredients
12 celery stalks with tips and tails and removed
2 cups peanut butter
Raisins

Directions

Cut each celery stalk in half width-wise, making two "logs" out of each stalk. Fill the center of each piece of celery with peanut butter; dot raisins on top to look like "ants".

Sunflower Cake

Serves 16, if everyone gets a twinkie.

Ingredients
1 baked 9-inch round cake
5 cups yellow icing
16 twinkies
Semi-sweet chocolate chips

Directions

Place the cooled cake in the center of a large serving dish. Frost the top and sides with yellow icing. Place chocolate chips in concentric circles on the top of iced cake to create sunflower seeds.

To make the petals, ice twinkies individually and place around the outside of the cake.

Cookie Cutter Vegetarian Sandwiches

These adorable finger foods, perfect for kids, definitely have a grown-up taste.
Serves 12

Ingredients
Chickpea spread
24 oz. chickpeas (3 8-oz. cans), rinsed and drained
1 1/2 stalks celery, minced
1 medium onion, minced
1Ê1/2 Tbsp.Êmayonnaise
1Ê1/2 Tbsp.Êlemon juice
1Ê1/2 tsp.Êfresh dill weed
Êsalt and pepper to taste
24 slices soft white bread, crusts removed

Directions

Place drained and rinsed chickpeas in the bowl of a food processor or hand mixer. Mix on medium speed until chickpea mash becomes a thick paste.

Add the rest of the ingredients and salt and pepper to taste.

Spread the chickpea mix onto the slices of bread to make sandwiches. With bunny, airplane, or heart shaped cookie cutters, cut the shapes out of the sandwiches. Garnish bread with pimentos if desired (for the eyes on the bunny or the windows on the plane).
